Note on chicken gizzards from Ruth Weldon, Bartlesville, OK

To ColumbiaMagazine.com:

Ed, here is a note from Ruth Weldon in Bartlesville, Oklahoma, a friend of Chuck Hinman, commenting on Tom Chaney's "Chicken Necks and Gizzards."
Shucks, I thought I was going to learn something about cooking gizzards in some delightful new recipe that would make them more tender, and tasty than ever. I am one of those strange people that likes gizzards. The only problem I have with them, they are tough. Every so often when I shop at Homeland, they will fry up a fresh batch of gizzards while I am shopping and I bring home about eight of them for lunch. I'm not supposed to eat deep-fried anything, but I cast that no-no aside occasions and enjoy. Sounds like Tom has cornered the market on good fried chicken. He must have a very special recipe. By the way, why do people call a recipe a receipt? One has nothing to do with the other. -Ruth - 11 July 2009
s/Robert Stone

Thanks. Mr. Stone. An perhaps a note to CM readers who may be confused by the Saturday date when this Tom Chaney piece appeared here on July 12, 2009. Ruth Weldon received an advance copy of the Hart County Herald release, one day earlier than ColumbiaMagazine.com prints the column. -EW

The Big Rig Trucker comments on UL Hospital food

Says legalized sales* would even help the taste of bratwurst in Adair County; says it would also help the local economy.

"I guess the cuisine at University Hospital was not as good as the fixins here at home!," writes Allan Owen, the Big Rig Trucker and contributing food commentator for ColumbiaMagazine.com, after comparing his own fare at UL Hospital in Louisville, KY, with the Fair Food Fare prepared by the Adair County Band Boosters.

Would like different admission policy at fair next year

Almost everyone was highly pleased with the events at this year's Adair County fair. One reader, though, had a concern with the Adair County Fair Board's admission policy, and suggests that the fair board consider an alternative to charging $10 per person in all cases, asking, "How can you expect a family of four to attend multiple nights when you charge them $40 to get in?" and adds, "This doesn't include food and some games your children want to play. Yes, it does cover the rides, but what if you have a one yr old that really doesn' t have a concept of what a fair is, but that parent is still charged $10 for that child to get in. Just a thought for lower consideration next year." -CM

Tom Chaney #213: Chicken Necks and Gizzards

Of Writers And Their Books, Sunday, 12 July 2009: Tom Chaney #213, Chicken Necks and Gizzards Next previous Tom Chaney book review on author Shelby Foote

By Tom Chaney
bookstore@scrtc.com

Chicken Necks and Gizzards

Last week was the Hart County Fair. The fair book said it was the hundred and twenty something-est fair. I reckon that is true if you consider the current child the grandson of a bastard relationship that goes back to the old fairgrounds in Horse Cave just across the road from the graveyard. We get mighty picky about ancestry hereabouts. Sometimes I think we'd be better off living like the goose -- waking up every morning to a new world.

Rev. Joey N. Welsh. July 16, 2006. Isaac Watts and Kentucky

ANOTHER ANGLE: the occasional musings of a Kentucky pastor
Isaac Watts on the Kentucky Frontier First posted 2006-07-16 in ColumbiaMagazine.come

By The Rev. Joey N. Welsh
joey_e_welsh@hotmail.com

July 17, 2009 marks the birthday of Isaac Watts (1674-1748). Now viewed as the father of the modern English hymn text, he wrote verses that could be sung to the popular tunes of his day and used wherever English-speaking people gathered for worship. Born to parents who dissented from the Church of England, he began creating rhyming couplets when he was a child. Sometimes his constant rhyming drove his parents to distraction.

II's Just Me Again #183:Shoo Fly!
The next earlier Chuck Hinman story is Home, sweet home, circa 1929 Reader comments to CM are appreciated, as are emails directly to Mr. Hinman at: charles.hinman@sbcglobal.net

by Chuck Hinman

Shoo Fly!

Growing up on a Nebraska farm is an experience that everyone should have. One thing however that I didn't miss after leaving the farm is flies.

Flies are attracted to the refuse of farm animals and poultry. We had cattle, horses, pigs, and chickens. Their considerable refuse was for the most part accumulated within 300 feet of our house.

Extra prayers for Robbie Burton appreciated

Cyclist in good humor as he recovers from motorcycle accident by Sonic. Big Al Owens asks for prayers for his cousin as he heals and reminds everyone to watch out for motorcyclists and to remember to share the road!

To ColumbiaMagazine.com

My cousin Robbie was the guy on the motorcycle who was injured in the accident by Sonic Drive In. He was flown to University Hospital in Louisville. I just so happened to be in Louisville so I was fortunate enough to be there when he arrived. I am glad to say that he is going to be OK, as he was informed by a nurse that smoking would kill him and he replied, "Not if I keep riding a bike." Thanks to all the friends and family who supported Robbie today! His wife Cindy was also injured in this accident, and she was by his side when I left. Any extra prayers that you might have would sure help Robbie at this time as he heals. Thank-you and God Bless! Please be aware of bikers and share the road!!!

EK comment: Stonefruit shortcake, w/Amaretto Torani syrup

About: Epicurean Kentuckian: Patriot Cake

Wow! I missed this 'til I browsed through the photo archives. That looks sooooooo good. I love cornmeal used in desserts, especially combined with lemon. I love real biscuit-style shortcake, too. Ever tried stonefruit (esp. peach/ apricot/ nectarine) shortcake with a sprinkle of Amaretto or Amaretto Torani syrup over the fruit, and whipped into the cream? Summer desserts- yum!!

s/Tami Wilson

Not yet, but sounds terrific! Thanks for the suggestion.. -EK
