Kentucky Spring Lamb was once a specialty known all over the Eastern United States, and was as well respected as Penn's Country Hams are today. The animals once were a major secondary income for Bluegrass tobacco farmers, who could use curing barns for sheep between burley seasons. Wendell Berry is well-known to South Central Kentucky.
