Scenic Metcalfe Co., KY: Honeysuckle fence

Pink and red honeysuckle forms a lightly tended fence along Cody Trent Road in Metcalfe County, a secluded lane which the unwary might think goes to Sulphur Well - but it doesn't. It dead ends. Metcalfe Countians seem to do more with natural fence rows, from utilizing Eastern Red Cedar for fencing, windbreaks, and habitat for birds, than almost anywhere else. And nothing could be prettier - and maybe more impenetrable, than this dense boundary line. - EW/LW

Epicurean Kentuckian: Cold Brewed Coffee

What's so great about Cold Brewed coffee? With cold brewing, you use time instead of heat to extract all the delicious flavor from coffee. It takes 18 hours to make a batch, but the result is a wonderfully smooth, sweet beverage with rich coffee flavor, and much less acid than in traditional hot brewed coffees.

The recipe is easy: put a half pound of coarse ground coffee in a filter like the Pure Joy-bag Nut Milk filter, put the filter full of coffee in a 2.25 quart pitcher, like this white plastic pitcher with red cover, and then fill with a tasty, drinkable water. We use filtered water.

Store in the refrigerator for about 18 hours, then remove the filter of grounds, and discard them. You can optionally pour the cold brew through a regular coffee filter to clarify and remove any fine grounds that might have slipped through.

The resulting concentrate can be diluted with water or milk to a 1-3 or 1-4 ratio and served over ice. Return the pitcher to the refrigerator and it will last for over a week.

Adair Fair hosts state meeting of Fairs & Horse Shows

The Adair County Fair and Horse Show hosted the 2016 spring meeting of the Kentucky Association of Fair and Horse Shows meeting this past weekend. The picture show some of the fair's past poster and other fair related items that were on display. The Adair County Fair and Horse Show dates for 2016 are June 25 & June 27 to July 2. We hope to see everyone out enjoying one of the communities most exciting events.
