Homemade ranchero sauce is a great use for abundant summer tomatoes, and pairs great with some melty cheese and an over-easy egg. This sauce was made with diced tomatoes, onions and red pepper, seasoned with some cumin, oregano, and a bay leaf, plus some homemade habanero sauce.
