If you find yourself with a stale loaf of really good bread, a little olive oil and balsamic vinegar can give it a second life. You need a proper and sturdy Italian or French bread for this treatment, so don't try it with anything from those store delis that also make donuts and croissants from the same dough. Cube or tear the bread and add lots of tomatoes plus onion, garlic, capers, and parmesan, and douse with quality olive oil and vinegar, then refrigerate.
