The Farmer's Market on the Square is open every Tuesday from 4:30pm-7pmCT and every Saturday from 8am-1pmCT, at the Adair Annex Parking Lot, 424 Public Square, Columbia, KY

The Farmer's Market on the Square invites all of our loyal customers to our Customer Appreciation Day Saturday October 18, 2014. We would be delighted if you would join us for a complimentary Soup Buffet luncheon featuring a variety of delicious homemade soups and breads.

Lunch will be served from 10am to 12:30pm CT or as long as the food lasts.

Epicurean Kentuckian: Tucker's Station's Minestrone



2014-10-14 - Tuckers Station Farm, 1535 Bull Run Road, Columbia, KY - Photo by Barbara Armitage. Minestrone is a winter staple in most Italian homes and this version makes it quick and easy for it to be your family's favorite too.

One of the many soups to choose from at the Farmer's Market on the Square Customer Appreciation Day Lunch Minestrone la Cucina is a favorite at Tucker's Station Farms.

From the Kitchen at Tucker's Station Farms

Minestrone la Cucina
- 3 15 oz cans Chicken Broth
- 1/2 cup Celery, chopped
- 1 cup Carrot, chopped
- 1/2 cup cooked Bacon or Pancetta, chopped
- 1 1/2 cup Tucker's Station Farms' Roasted Garlic and Basil Marinara
- 1 15.5 oz can Cannellini Beans, undrained
- 1 small Zucchini, cut into 1/2 inch cubes
- 1 cup Pasta of your choice
Combine the broth, celery, carrot and bacon or pancetta. Stir in the Tucker's Station Farms' Roasted Garlic and Basil Marinara. Cover and simmer 15 minutes.

Add beans, zucchini and pasta to soup and simmer uncovered 10 minutes.

Like most soups Minestrone is best served the next day.

Serve topped with grated Heavenly Homestead Parmesan Cheese and a side of Tucker's Station Farms' Parmesan Garlic Bread. - BARBARA ARMITAGE
