Governor: State continues to see exponential COVID-19 growth

By Crystal Staley/Sebastian Kitchen

Frankfort, KY - Gov. Andy Beshear implored Kentuckians to adhere to new restrictions and guidance that will help stop the rapid spread of COVID-19 in the commonwealth.

The number of Kentuckians diagnosed with COVID-19, hospitalized with the disease, admitted to the ICU and put on a ventilator because of complications from the virus continues to rise week over week. Today's case report is the highest ever for a Monday.

"Day in and day out, our health care workers are doing what it takes. So day in and day out, we have to, too. Think about their sacrifice, every day going into a unit where they could contract this virus that they see people die from," said Gov. Beshear. "What about our sacrifice? Over these coming months until we get to a vaccine, are we willing to step up for them and for each other, to make sure we can all get through this?"

OCC Collects 2,001 Shoe Box Gifts

Click headline for photos from the last day of donations

Operation Christmas Child has completed another successful campaign in Adair County collecting 2,001 shoebox gifts for children in need. OCC is one of many outreach projects of Samaritans Purse. They have been collecting shoebox gifts for over 25 years and sending them to boys and girls around the world.

"Needless to say we are once again overwhelmed by the generosity of the people of Adair County. We thought that we were going to come up just a few boxes shy of 2000 and then we received some items that had been collected by residents of Angel Manor Apartments which enabled us to pack an additional number of shoeboxes to reach our goal of 2,000," said Community Relations Coordinator Mark Fudge.

This year the boxes collected in Adair County will travel to the Charlotte, North Carolina Processing Center. The boxes will go from there to children all around the world. "This outpouring of love by the people of Adair County is nothing short of amazing, especially considering the pandemic that we are experiencing," said Fudge.

2021-2022 Homestead Exemption

By Jill Midkiff

Frankfort, KY - The Kentucky Department of Revenue (DOR) has set the maximum homestead exemption on real estate owned by qualified individuals at $40,500 for the 2021 and 2022 tax periods. By statute, the amount of the homestead exemption is recalculated every two years to adjust for inflation. The 2021-2022 exemption reflects a $1,200 increase over the 2019-2020 exemption of $39,300.

To qualify for the homestead exemption, a person must be at least 65 years old during the tax period or have been classified as totally disabled by any public or private retirement system. The property must also be owned, occupied and maintained by the taxpayer as a personal residence on the Jan. 1 assessment date.

History Monday: Male and Female High

There may still be some readers who are unaware that Columbia was considered a center of educational advancement from its earliest years. Following such institutions as Robertson's Academy, the Male & Female, or M&F, High School was instituted in the ante-bellum days of the town and flourished, bringing many students from nearby as well as from considerable distances. The following is Judge H.C. Baker's thoughts on the old school, from 1902. --Mike Watson, November 2020

Reminiscences of Male & Female College, Columbia, Kentucky

By Judge Herschel Clay Baker
Adair County News, 16 April 1902

Interesting Reminiscences--Male and Female College in Columbia Many Years Ago--An Old Catalogue Furnishes Information for the Readers of The News--Issued in 1836 in Poster Form--The reputation of Columbia as an educational point is not of recent growth. It may be a matter of surprise to some persons to be told that as far back as the year 1836 there was a school here with one hundred and twenty-two pupils in attendance.

Its catalogue, worn and yellow with age, now lies before me. It is in the form of a poster, eight by twelve inches, and contains the names of those who were in attendance, also the names of the trustees and faculty.

Of the large list of names, only five to my knowledge are living.

Epicurean Kentuckian: Food items like old days

By Linda Marcum Waggener,
Aunt Almedia's biscuit fan

Two reads about food on Columbia Magazine this weekend motivated me to share this note in case you missed them.

In Mike Watson's story, Turkey raising was once Big Business in Adair, it fascinated me that our Thanksgiving menu has changed little in over a hundred years. The Hancock Hotel menu listed many of those most familiar dishes that will grace our family tables this week. The ones I'm not sure of are 'black cake' and 'chicken and nut salad.' If anyone has either of those recipes, it would be appreciated.

The other food item was in Carol Perkins' visit to Carol's Kitchen. It felt like a visit in Aunt Almedia's kitchen when she was in her 70s and I was among her fans, asking her to share the recipe for her perfect angel-cloud biscuits.

She never did write down the recipe and after watching Brenda Gantt's biscuit making on YouTube I understand why. It's more technique than ingredients and the only way Aunt Almedia could have given me the recipe would have been to pose my hands right there in her big wooden bowl of flour and milk, with her beautiful hands guiding mine - it's an art and the Gantt video Carol discovered shows why!

Here's wishing you a joyous Thanksgiving week and many good eats!
