Thank you for your question, Billy Joe. I join you in missing the flag and I miss the tree and I would like to see all the blinds in all the courthouse windows match - either open, up, down, closed - but at least matching. - LW

Letter: A light-handed, time-tested biscuit technique

By Betsy Sharp

Carol, please get a bag of White Lily Self Rising Flour and try the recipe on the back. This is the way I have made biscuits since 1960.

I just usually dump the amount of flour that I think I will need into a bowl and use a pastry blender or a couple of knives to cut up the Crisco (about the size of a goose egg) and then I add a cup of milk and I mix it with a large spoon until it is blended well.

Child danger - know what to look for in human trafficking

Enticing and stealing children to be sold into networks of slavery and sex - unthinkable in a small town, right? Our law enforcement officers say human trafficking is happening right here, right now, and every one of us should know what to look for and how to help.

By Robbie Harmon, Dean of Students/Director of Pupil Personnel
Adair County Public Schools

A training workshop at 5pmCT Tuesday, February 5, 2019 at the Extension Office, 409 Fairground Street in Columbia will provide citizens the tools to identify and report suspected trafficking activities.

Please help us spread the word so that everyone can know about the dangers of human trafficking and the tactics predators are using to lure children in.

Letter: Biscuit secret revealed

Sonya Spoon writes:
I had never been able to make biscuits either until a few years ago my cousin gave me a recipe to try. They are perfect every time! Simple to make with only two ingredients:
  • 3 cups of self-rising flour (yes that is no mistake, self-rising)
  • 16 ounces of heavy whipping cream
Mix as you would any other biscuit recipe. They may be a little stickier to begin with but when you put them on your counter on top of sprinkled flour and knead and work them they get less sticky. Roll out and then cut them out. Bake in a 450-475 degree oven.

I am really not sure of the time to bake because I just keep checking them. I am getting to be like my mom and grandma, by guess and by golly. LOL --Sonya

Letter: Should farmer's market relocate?

Betsy Fausnaugh writes:
Perhaps it's time for the farmer's market to think of relocating. There are numerous empty buildings in the area with large parking areas. Perhaps one of those owners would be willing to host the market. Maybe there is even a generous land owner willing to donate a place for the market.

There has to be better solutions in this giving community, to where one business does not dominate over others. Time to work together, unlike our current U.S. Government!! --Betsy Fausnaugh
