Comments re article 71530 Reminiscing Thanksgiving and Hog Killing

By George Rice

After reading Billy Joe's comment it reminded me of what I had left out and that was the hog head and feet.

In those days it was important not to waste any part of the hog.

Billy Joe Fudge: Old time hog-killings ended with souse making

Souse is southern; in non-southern regions of US it is known as "Hogs-Head Cheese." Souse contained any tidbits of meat, cartilage and anything left over that was soft enough not to break a tooth.

By Billy Joe Fudge

I really enjoyed George Rice's historical account of hog killing time. Salt-curing of hams, shoulders, side-meat and jowl was transitioning during the late '50's and '60's to the less salt dependent, Sugar-curing method. I remember the heated discussions about which method was the "best."

Of course and in addition to your extensive description of Hog-killing Day there was the making of Souse. Souse in most non-southern regions of the US is known as Hogs-head Cheese.

Thank You Mr. Rice for sharing your story. I have heard different parts of the pork making process, but not the entire process. George Rice story evokes memory of sausage grinding accident

It happened the night she and Billy Flatt, her brother, were grinding fresh hog meat for sausage and she fell asleep and suffered an injury, one which would have challenged Drs. Kleinert & Kunz. It was a painful experience, but thanks to the good Lord and Dr. George Otis Nell, she made full recovery, and holds no prejudice toward pork. Lard is still her favorite frying medium, and country ham her favorite meat. Where she lives now, far, far away from the Kentucky 92 Beautiful Joppa/Montpelier area of her childhood, they are ignorant of Country Ham. She is lucky to have it hauled in from Kentucky. That's how she came to be in possession of a prized Penn's ham, stored for Christmas dinner, this year in Englewood, Florida

Katie Carter Campbell identifies One Day or Less Mystery Photo

The photo is of the children of Avery & Grace Piercy
Comments below re: Comments re photo 57840 One day or less Mystery Photo Identify his group

On Friday, 28 November 2014, John Campbell sent a picture of a beautiful Adair County family, with this puzzler: *"No, this is not the 'Culhanes' from the Hee Haw television program. This is a family from around 1968 in Adair County around Thanksgiving and Christmas time. Though they live in several different areas of the state of Kentucky now, they did meet at their mother's house for Thanksgiving yesterday. Do you happen to know any of these in the picture? (identification of the baby dolls are not required)" - JOHN CAMPBELL.

Answers came throughout the day Friday, with the most complete, the one we'll post to the photo, from Katie Carter Campbell. In order of arrival, here are the answers we received - all of them correct, Katie's is just the one which is complete:

Joyce Turner wrote at 11:25amCT: These are the children of Miss Grace Piercy, my late husband's cousins. Just sayin'

George's account squares with my memories of those long gone days, with a few exceptions.

For the last three or four years I have written stories about Christmas. In my eighty years of living I have seen it change from "Merry Christmas" to "merry xmas" and now to "Happy Holidays" and/or "Seasons Greetings" Many object to the Nativity Scene.
