This six-layer Apple Stack Cake made from historic recipe collections of Mary Anne Loy was part of the annual Fall Luncheon fare at the Trabue-Russell House. The recipe calls for the thin layers to be cooked in black iron skillets, with dried apples between the stacked layers. It includes sorghum which was an early sweetener. Years ago apples in season were dried in the sun so they'd be available in the winter for this cake and for fried apple pies. Comments | Permalink
