Epicurean Kentuckian: an old fashioned cake

2025-10-27 - Columbia, KY - Photo by Linda Waggener, ColumbiaMagazine.com
This six-layer Apple Stack Cake made from historic recipe collections of Mary Anne Loy was part of the annual Fall Luncheon fare at the Trabue-Russell House. The recipe calls for the thin layers to be cooked in black iron skillets, with dried apples between the stacked layers. It includes sorghum which was an early sweetener. Years ago apples in season were dried in the sun so they'd be available in the winter for this cake and for fried apple pies.

Travel: Finding the familiar, far away

2025-10-27 - Outside Copenhagen - Photo by Veronica Arnold
A roadside barn in a beautiful setting, on the other side of the Atlantic. Veronica writes, "Visiting Denmark as a a Kentuckian I was looking at what was growing in the fields, and types of cows and sheep I saw in fields. For you beef farmers, I saw lots of Herefords and Highlands and Parks. Hay was baked and wrapped and silage pits were full, covered in tarps, weighed down by tires. Yup, seemed like familiar sites to me."
