Epicurean Kentuckian: Hearty Beans & Rice
PREPARED WITH THE HOLY TRINITY: One last round of cold weather calls for one last hearty dish, but this one is good on any day. This upscale beans and rice starts with part of a smoked sausage, browned and removed from the pan, then mirepoix (the holy trinity of carrot, onion and celery), then half a red pepper and 2 cloves of garlic. Add the sausage back, plus 2 cans of red kidney beans and thyme, salt and pepper to taste. Simmer for 15 minutes and serve over rice.
