New Year's Day cabbage recipe for good luck Cabbage is a traditional food to be eaten the first day of the year, usually believed to be the side dish with black eyed peas, to assure the best of luck in the months ahead. Cabbage can be planted in summer and fall. It is a good source of potassium, and vitamins A and C. Not only will you find it part of the menu here in south central Kentucky but also in many parts of the United States. The boiled cabbage recipe follows. New Year's Day Cabbage Ingredients we'll have at the Waggener house: Head of green cabbage Salt 2 tbsp butter or olive oil Pepper Bring large pot of water to boil, including a tablespoon of salt. Remove any damaged leaves, drop the cut up cabbage into boiling water. Boil cabbage for up to 15 minutes, until it's tender - careful not to overcook. Drain cabbage into a strainer and place in a bowl with butter or olive oil, fresh ground pepper if desired, and salt (about 3/4 of a teaspoon for a large head).
